Can I make a confession?
I am attracted to pretty things.
I know, I know. This is very surface level, but stay with me, yea?
Kind of ironic really, considering I write about minimalism aka “intentionalism.” But branding and marketing gets me. It pulls me in. Like a mouse in a trap, done. By the way, that’s a really brutal comparison but like, that’s what it feels like.
Geesh, this sounds so shallow of me but I’m just being honest. I don’t know what it is but as I’m scrolling through Instagram’s “explore” page, there’s no hope for me. I see a girl with beautiful hair, I follow her because I want beautiful hair. I see an imagine with colorful food, I follow that user because I want all the food in my belly. An image of a beautifully decorated patio? I’m all in because I crave that environment to host parties…

And I would being lying if I didn’t tell you that is how I discovered today’s bosslady, Tedi Sarah!
I stopped at Tedi’s feed and hit “follow” because I was captivated by her images. But as I continued to follow her I got so.much.more! She offered value. A lot of it.
Listen, there’s so much I could tell you about Tedi. She loves animals, she broke up with meat and lives a plant based lifestyle, and basically everything that she does is with the intention to help make the world a better place!

[Hi Tedi! Introduce yourself and tell us about your blog.]
Hi! I’m Tedi. I’m originally from Minnesota but I’ve lived in Boston, Chicago, and now I live in New York City. I adopted a plant-based diet four years ago and started my blog to share what I had learned about plant-based eating with others. After changing my diet, I started becoming more and more interested in a vegan lifestyle, and now my blog focuses on everything from vegan food to vegan fashion and beauty, and everything in between. When I’m not blogging I work at my “day job” at a pediatric hospital. My background is in counseling psychology and I’m also a certified child life specialist. And when I’m not blogging or at work, I’m a foster mom to rescue animals here in NYC.
[What is your favorite meal to feature?]
Oooh that’s a tough one! I think my most favorite meals to feature are the ones my boyfriend makes. I’m a good cook, but he’s an actual plant-based chef, so everything he makes is pretty spectacular. I recently posted an amazing plant-based caesar salad he made on my Instagram. It had romaine, kale, brazil nut parmesan, smoked cashew cheese, pumpkin seeds, chili flakes, fresh ground pepper, homemade vegan caesar dressing and a scoop of his walnut “tuna” salad. It was so, so delicious!
I’m also always a sucker for posting a good avocado toast or acai bowl. Typical blogger.
[What are some essential foods and tools you keep in your kitchen to create easy, delicious meals?]
I always have frozen fruit on hand for smoothies for breakfast. My staples are mangoes, bananas, and berries. I love my Vitamix blender which I just got this year, but before I got that I used an immersion blender, which is a much more affordable option if someone isn’t ready to splurge on a high-powered blender. The immersion blender doesn’t get the smoothies quite as smooth, but it definitely works and the clean-up is super easy.
I also always have pasta on hand and veggies (fresh or frozen) to whip up a simple pasta dish when I can’t think of anything else for dinner. I often use lentil pasta because it’s gluten-free, high in protein and high in fiber. And I love putting nutritional yeast on top of my pasta, so I always have that around too. The great thing about nutritional yeast is that it has a cheesy taste and is high in B vitamins.
[Why did you decide to start a blog?]
As I mentioned before, I started the blog because I wanted to share with others what I had learned about a plant-based diet and vegan lifestyle, that I simply hadn’t known before. I like to think that the target audience I write to is people like the “old me”. Someone who loves animals, cares about the environment and wants to eat healthy, but just hasn’t learned about the amazing benefits of a plant-based diet or lifestyle yet. I like to make it easy for people like the old me and my friends to shop kinder, whether it’s for groceries or clothes. My blog is meant to be a one stop shop for “I’m interested in a vegan lifestyle, and I love animals, but I’m not quite ready to delve into it head first yet!”
[What would be your number one tip to help someone transition to a plant based diet?]
My number one tip is to follow plant-based food accounts on Instagram! I find so much meal inspiration on Insta. Whether you’re cooking for yourself or a family, there are so many accounts out there to help give you ideas of what to make, especially when you’re just starting out.
[What is your favorite holistic health tip or trick?]
This is a good question! I swear by elderberry to help knock a cold right out of your system if you’re getting sick. I take it in liquid form and add it to my water at the first sign of a cold. Elderberry has been used for immune support by traditional cultures for centuries. I wish I would have taken my own advice recently when there was a cold going around my office, because I didn’t take my elderberry, and got sick for the first time in years!
[Your instagram is incredible! Where do you find inspiration for all of the meals you create?]
That’s so nice! Thank you! A lot of the food I feature on my Instagram is actually at restaurants here in NYC. I’m really lucky to live in a city that has so many plant-based/vegan options. Since so many people live in, and visit, New York every year, I love to feature those restaurants so that people know where they can get healthy, clean, plant-based eats!
[If you had to eat one thing, every day, for the next year of your life, what would it be?]
That’s another tough one! But I think I gotta go with an amazing plant-based pizza with a delicious artisan nut based cheese melted on top. YUM!
